Trans fats would be the unhealthiest from all fats in a modern diet – it is so called processed fats. It is a kind of fats that we can‘t find in the nature, but can find in processed food.
Trans fat definition Trans fatty acids form, when vegetable oil becomes hard and it converts into margarine. Trans fatty acids are aplenty in margarine and there where last mentioned compound is used – in roasted food, horsd’oeuvres, fast food. We can diagnose availability of trans fats just in laboratory research. This is because fats become trans fats at the time of operational process – hydrogenization – in industry, like a lateral product of this process. Hydrogenization of natural fats, mostly of different vegetable oils, was introduced at the beginning of 20th century. And from July 1, 2007 all restaurants of the New York City will have to withdraw oils with trans fat from circulation, but they still will be able to market other articles of food, containing trans fat.
